Chocolate Zucchini Cake w/ Nutella Chips
I found another use for Nutella
After going through the better part of three Nutella jars in as many months, I needed to break free from the habit of heaping the cocoa-nutty smear on crepes alone.
Luckily, a person of fine tastes had emailed me a zucchini cake that I had yet to attempt. This opportunity to create a dessert that would gratify the most insatiable chocolate fanatic could not be passed over. It is my pleasure to share the results with you.
Chocolate Zucchini Cake w/ Homemade Nutella Chips
Nutella Chips Ingredients:
1/2-3/4 cups Nutella
2 tablespoons of butter
Line a tray or sheet with aluminum foil 2 1/2 hours before starting the cake. Heat double boiler, or glass bowl in pot of water. Melt Nutella and butter. Stir until well mixed. Put inside-out sandwich bag into a cup and fold over the edge. Pour Nutella into bag. Cut a small hole in corner of bag. Squeeze bag and use dabbing motion to fill the sheet with chips. Freeze for at least 2 hours.
Zucchini Cake Ingredients:
1/2 margarine or butter
1/2 vegetable oil
1 1/2 cups granulated sugar
2 large eggs
1 tsp vanilla
1/2 cup sour milk (add 1/2 tsp vinegar to milk)
2 1/2 cups flour
1/4 cup cocoa powder
1 tsp baking soda
1/2 tsp cinnamon
1/2 tsp nutmeg or ground cloves
2 cups grated zucchini (approx. 1 large zucchini)
*optional* 1/2 cup chopped walnuts
Preheat the oven to 350ºF. Grease then flour a 9×13 inch pan and set aside. In a large bowl, beat butter/margarine, oil, and sugar together until creamed. Combine eggs, vanilla, and sour milk. In a separate bowl, sift flour, cocoa, baking soda, and spices. Add dry mixture to the large bowl. Stir the mixtures together while adding the zucchini. Stir half the Nutella chips and nuts. Pour the batter into the pan. Spread the batter evenly then cover with the remaining chips and nuts. Bake for 45-50 minutes. Don’t let a delicious looking chocolate top fool you – stick a toothpick in the center to ensure that it’s done.
